3 Easy and Tasty Recipes
I am quite sure we all have our ‘go to’ recipes for breakfast, lunch, dinner and snacks. I certainly have my favourites and today I though I might share some new recipes I have discovered (and loved). Possibly after reading this you may go and try some of these! 😉
Many of you who read my blogs follow me on either my Instagram or Facebook & you may have seen that over the past few weeks I have been sharing a lot of ‘foodie’ posts. Well here I am to share them!!
Guacamole and Hard Boiled Egg (serves 2)
Starting off strong with this delicious ‘brunch’!
Recently I participated in Ryvita UK’s live cook along with Davina McCall and Peter Sawkins (Bake Off Winner) and this was one of the recipes.
You will need:
2 eggs
1 avocado
1 red onion
1 red chilli
½ lime
Coriander (optional)
Salt and Pepper
4 Ryvita Crackers
Method:
Stick the eggs in a pan of water and once boiling put on a timer for 7 mins. Once they are done take them out and place in bowl of cold water (put them to the side we’ll need them later on).
Take your avocado and peel, slice and smash in a bowl.
Cut up your red onion and add to the avocado.
Cut up your red chilli. What I do is slice it into very tiny pieces as it can be very spicy! You may not want to do the whole thing! Once you have done that, add it to the avocado mix!
Next you want to squeeze in ½ a lime worth of lime juice and if you would like to chop up some coriander and chuck it in too! (I didn’t have any so I didn’t).
Season the avocado mix with salt and pepper and mix everything together.
On 2 plates have 2 Ryvita crackers on each and place a good dollop of guac on each cracker.
Take your eggs and peel (they should be hard boiled but its ok if the yokes are a wee bit runny).
Cut up into pieces and place on top of the crackers…
And voila – brunch is served!!
Absolutely love this recipe and the fact that it is so versatile. As you can see I didn’t add coriander but still made a perfect brunch and you can choose to add parsley, celery or anything else that takes to your liking. Recommend ✅
Messy Meatballs and Pesto Pasta
(mine served 4 but I didn’t use measurements as it was easy to do it by eye)
We had this for dinner last night (made by yours truly) and it was an experiment. I made up most of the recipe but took the base idea from Jamie Oliver’s cookbook ‘5 Ingredients’. Annoyingly I did not take any photos of this one so you will just have to trust me!
You Will Need:
To make the meatballs:
Beef mince
Bread
Basil
Thyme
Oregano
2 or 3 eggs depending on size
Salt and Pepper
To make the sauce:
400g of chopped tomatoes
Quarter can of water
Salt and Pepper
Mozzarella
To make the pasta:
(again didn’t use measurements just used the remaining pasta in the packet)
Chosen amount of pasta
4 tablespoons of pesto
Salt and pepper
Slab of butter (optional)
Method:
Take your bread and tare into pieces and place in blender/food processor to make breadcrumbs. Add in your thyme, basil and oregano.
Put your beef mince into the mix and combine with the breadcrumbs.
Whisk together the eggs and salt and pepper and pour into the mince mix. Blend again.
Roll the mix into meatballs using your hands (mine made about 20).
Place your meatballs into a large pan with a little cooking oil.
Heat until lightly brown all over. Make sure to move the meatballs around in the pan so they don’t stick.
Pour your 400g of chopped tomatoes into the pan and then add ¼ can of water.
Chop up your mozzarella into small (but not too small) pieces and place a slice on top of each meatball.
Put the lid on the pan and let the meatballs sit in the sauce on medium heat for about 7 minutes.
After 7 minutes turn down the heat and leave to simmer for another 10 mins.
Meanwhile, cook your chosen pasta (I chose spaghetti) according to the packet.
Once cooked drain and put back into pan.
Place a large slab of butter into the pasta and mix in.
Season with salt and pepper.
Then mix in your 4 tbsp of pesto.
Get your plates and place some pesto pasta on each plate.
Finally get your meatballs and place onto plate with lots of the tomato sauce.
And bam! Dinner is served!
3 Ingredient Cookies
I saw this recipe on Instagram and I put it on my story stating that I was definitely going to try these and I stuck to my word. I will be trying them again and I cooked them a wee bit too long but wow! Perfect for a mid morning snack or even a quick breaky.
You will need:
2 ripe bananas
1 cup of oats
Chocolate chips
Method:
Set your oven to 180°.
Smash up the bananas in a bowl.
Add the cup of oats.
Add the chocolate chips.
Mix all the ingredients together!
Why not make it 4 or 5 ingredient cookies?
Add cinnamon!
Add some peanut butter!
Add honey!
Add anything to make them yours!
Line a baking tray with parchment paper and add spoonfuls of mixture to the tray.
Once you have used up all the mixture you can even add a chocolate button to the middle of each cookie!
Bake in the oven for about 10 minutes or 7 if you have a hot oven like me!!
Take out and cool.
Enjoy with a cup of tea or coffee!!
So there you have it! Three tasty recipes. One for breakfast/brunch/lunch (you choose), one for dinner and one for a tasty snack with a cuppa.
